Primal & Paleo Recipes from Jessica’s Kitchen
“One of my favorite indoor places to be, besides the gym, is the kitchen. With each passing year, I have grown increasingly fond of cooking – the combination of creativity and pragmatic detail is a rewarding process that leads to the immediate gratification of consumption. In other words, I love to cook because I love to eat! But not just anything. I love to eat delicious natural foods that nourish my body and make me feel good, strong energized and satisfied; not foods that leave me bloated, lethargic, or ravenous. You know, like having an afternoon sandwich, and then scouring the refrigerator or snack drawer in an hour wondering why you’re so hungry again? Answer – Insulin crash. It’s all about glucose/insulin!
Since I have gone nearly completely grain & dairy free (I allow myself a 10% special occasion curve, and so should you!) I have come upon, and come up with my own, dozens of delicious grain-free recipes. I will do my best to post as many of them as possible so that you may enjoy them yourselves, and share them with your friends & family.
*Side note, for those who are new to, or are just thinking about decreasing/eliminating grains from your diet* What do I Miss about going Grain-Free? NOTHING! This is surprising to most people, and even to myself. But now that I eat mostly fresh whole foods, and cook at least 90% of my meals, I have a whole new appreciation for food and opinion of what GOOD food really tastes like. I don’t miss the cheap, unsatisfying ingredients of flour, corn, and sugar. Instead, I savor the pure raw taste of locally grown fruits, fresh vegetables sauteed in olive oil and garlic, served with wild Alaskan salmon (crispy on the outside, juicy on the inside). And don’t even get me started on the fresh taste of morning eggs (locally hatched), and succulent blueberry pancakes, made with ground almond flour and topped with berries or warm coconut oil. I could go on and on.
But let’s get back to the recipes.
First, I need to give you fair warning: I rarely ever cook with exact measurements, which means I will rarely give you exact measurements. Cooking (unlike baking) is not a science. I’ve made my best (and worse) meals through trial and error. My advice is don’t get too hung up on the measurements. Use your senses – sight, smell, taste. Make each recipe your own, adding or omitting whatever your tummy fancies.
