Summer Veggies with a twist!

A simple, easy recipe for grilled vegetables – the perfect Summer Side Dish

I tend to prefer my vegetables plain, just slightly steamed or sauteed. But it’s true that they can get boring after a while, so sometimes you just have to step it up a notch.  I came up with this simple delicious recipe in the same way that I come up with most of my recipes – by finding ways to use the last of an ingredient; this time the ingredient happened to be feta cheese.

Ingredients

  1. Chopped vegetables – I used eggplant, red peppers, green peppers, and onion
  2. Feta cheese – full fat, one block
  3. Balsamic vinaigrette  – 1-2 tbsp, depending on preference
  4. 1-2 tbsp olive oil
  5. Sea salt, optional

Directions

  1. Toss chopped veggies in olive oil, sprinkle with sea salt if desired
  2. Grill to directions of your grilling equipment (I use an indoor oven convection grill)
  3. Toss with crumbled feta & vinaigrette
  4. Serve immediately

    Today I did 7 rounds of the following in 19 minutes:
    10 back extensions
    20 situps
    I’m still recovering from a shoulder issue so it’s lower body for me for a while. The warm-up Troy took us through helped with shoulder mobility, flexibility, and strength.
