A simple, easy recipe for grilled vegetables – the perfect Summer Side Dish
I tend to prefer my vegetables plain, just slightly steamed or sauteed. But it’s true that they can get boring after a while, so sometimes you just have to step it up a notch. I came up with this simple delicious recipe in the same way that I come up with most of my recipes – by finding ways to use the last of an ingredient; this time the ingredient happened to be feta cheese.
Ingredients
- Chopped vegetables – I used eggplant, red peppers, green peppers, and onion
- Feta cheese – full fat, one block
- Balsamic vinaigrette – 1-2 tbsp, depending on preference
- 1-2 tbsp olive oil
- Sea salt, optional
Directions
- Toss chopped veggies in olive oil, sprinkle with sea salt if desired
- Grill to directions of your grilling equipment (I use an indoor oven convection grill)
- Toss with crumbled feta & vinaigrette
- Serve immediately

I’m still recovering from a shoulder issue so it’s lower body for me for a while. The warm-up Troy took us through helped with shoulder mobility, flexibility, and strength.
